New BakeRite™ ingredient systems from Advanced Food Systems replace up to 65% of whole egg solids in a diverse range of baked goods such as pound cake, muffins, cupcakes and cookies. These systems are custom developed to suit specific formulation requirements.
BakeRite systems maintain natural texture and flavor, excellent air cell structure, and finished product volume, while drastically reducing the costs of using whole egg solids, which have risen in cost by more than 55% since 2006.
These systems also reduce fat and cholesterol, and extend shelf life by retarding the staling process, so products remain tender and moist through extended storage periods.
